Ham & Potato Gems Bake

This potato gems bake is a twist to the old fashioned potato bake! Rather than peeling, boiling and grating potatoes, this recipe uses crispy potato gems instead. Tasty and satisfying, this easy recipe is the perfect lunchbox addition.

Ham & Potato Gems Bake

Ingredients

6 slices D’Orsogna 100% Natural Ham Premium Unsmoked

500g frozen Potato gems, thawed

2 tbsp Olive oil

½ Onion, chopped

½ Bell pepper, chopped 

1½ cup Chinese cabbage, chopped

2 sprigs Spring onion, chopped 

2 Garlic cloves, chopped

10 eggs

1 cup Cream 

1¼ cups Tasty cheese, shredded

½ tsp Sea salt flakes 

½ tsp Crushed pepper

 

Method

Preheat the oven to 180°C. Heat olive oil in a pan and add onion, garlic, bell pepper, Chinese cabbage, spring onion, half of the ham slices, salt and pepper. When the vegetables start to soften, transfer the contents into an ovenproof rectangular casserole.

Mix the eggs with cream and pour over the vegetables and ham. Without stirring, sprinkle the top with cheese and cover the entire surface with potato gems. Tear the rest of the ham slices on top of the potato gems. Season with salt and bake for 20-25 mins.
