Grilled Prawn Aguachile Salad
Looking for a light and easy salad idea? Try this Grilled Prawn Aguachile Salad.

Aguachile Salad is traditionally a Mexican salad made with raw prawns marinated in a green chilli dressing, in this version the prawns are grilled until charred and tossed in a salad of cos lettuce, white onion and cucumber. You can swap the grilled prawns for raw sashimi grade prawns. Toss them in the dressing and marinate for 1 hour to cook in the acid of the lime.

Serve Grilled Prawn Aguachile Salad with coriander, toasted tortilla and lime.

Grilled Prawn Aguachile Salad Recipe

Makes 4 serves

Ingredients

  • 400g medium potatoes, peeled
  • 1 tbsp extra virgin olive oil
  • 1kg green prawns, peeled, tails intact
  • 2 baby cos lettuce, leaves separated
  • 1 white onion, thinly sliced
  • 1 telegraph cucumber, seeded and thinly sliced
  • 1 cup coriander leaves
  • 8 small tortillas, toasted
  • Lime wedges, to serve
  • 1 long green chilli, seeded and finely chopped
  • ½ cup finely chopped coriander
  • ¼ cup lime juice
  • 2 tbsp extra virgin olive oil (for the dressing)

Method

  1. Preheat oven to 200°C (180°C fan forced). Place potatoes in a saucepan of cold salted water and place over high heat. Bring to the boil and cook for 8 minutes, or until just tender. Drain and set aside.
  2. Place cooked potatoes on a large baking tray lined with non-stick baking paper. Drizzle with oil and place in the oven. Roast for 15-20 minutes, or until golden. Set aside to cool slightly.
  3. Preheat chargrill to high. Toss the prawns in oil; season. Grill the prawns, turning, for 6 minutes, or until charred and they change colour. Set aside.
  4. To make the dressing, combine chilli, coriander, lime juice and 2 tbsp oil in a small bowl and whisk to combine. Season.
  5. Place potatoes, lettuce, onion and cucumber in a bowl. Add half the dressing and prawns, and toss to combine. Serve with coriander, extra dressing, tortillas and lime wedges.

Smart Tip

You can swap the grilled prawns for raw sashimi grade prawns. Toss them in the dressing and marinate for 1 hour to cook in the acid of the lime.

How to Grow Co Lettuce

Cos lettuces are easy to grow from seed or seedlings in the garden or in pots. They need well-draining soil, rich in organic matter and around six hours of sun, but shade during the hottest part
of the day. The shallow roots are susceptible to water stress so water often to keep the soil moist.

Cos lettuces grow to form an upright, tall loose head. The entire lettuce head can be picked, or just external leaves. Harvesting the external leaves improves ventilation while reducing the hiding spots for snails and slugs. Use a knife to pick lettuce heads and leaves. Rinse well before eating.
