Grilled Bundt Cake with Strawberry Salsa

Make a delicious Bundt Cake and toast slices of cake under the grill, serve Grilled Bundt Cake with Strawberry Salsa, whipped cream and lime wedges for afternoon tea or dessert.

Grilled Bundt Cake with Strawberry Salsa Recipe

Serves 12

Ingredients:

Butter and breadcrumbs for tin

Whipped cream, to serve

For the Bundt Cake

2 eggs

200g white sugar

300g flour, sifted

1 ½ tsp baking powder

½ tsp vanilla sugar

50g butter

100ml milk

For the Strawberry Salsa

250g strawberries, hulled and chopped

8-10 fresh basil leaves, torn

1 lime, juice only

50g raw sugar

Method:

Preheat the oven to 175°C (155°C fan forced). Grease Bundt cake tin with butter and sprinkle with breadcrumbs.

Using an electric beater, beat the eggs and sugar until light and fluffy. In a bowl mix the flour, baking powder and vanilla sugar.

In a small saucepan melt the butter and add the milk. Pour the milk mixture into the sugar mixture and combine. Gently fold the flour mixture into the batter. Pour mixture into the prepared tin.

Bake in the oven at 175°C (155°C°fan forced) for 28-30 minutes. Let cool. Divide cake into 12 pieces and toast under the grill.

To make salsa, place strawberries and basil in a bowl. Add lime juice. Stir in raw sugar. Serve with the grilled Bundt cake with salsa and whipped cream
