Granola recipe, brought to you by MiNDFOOD.

Makes 7 cups

½ cup oil

¾ cup honey

1 tbsp vanilla extract

1 tsp cinnamon powder

3 cups rolled oats

½ cup flaked almonds

½ cup pumpkin seeds

½ cup sunflower seeds

1 cup shredded coconut

½ tsp salt

2 cups dried fruit (mango, apple,

paw paw, raisins, apricot)

½ cup dried cranberries

2 tbsp linseeds

milk, yoghurt and fresh fruit, to serve

1 Preheat oven to 160˚C. In a small pan, heat oil and honey over a low heat; whisk until honey has melted. Stir in vanilla and cinnamon and remove from heat.

2 In a bowl, add oats, almonds, pumpkin seeds, sunflower seeds, coconut and salt. Add honey mixture and stir until combined.

3 Spread mixture out in a baking dish; bake for 30-40 minutes or until toasted. Stir every 10 minutes for the first 20-30 minutes and then more frequently during the last 10 minutes as it will start to brown quickly.

4 Remove from oven and add dried fruit, cranberries and linseeds. Set aside to cool. Serve with milk, yoghurt and fresh fruit.
