Serves 2
200g Grated Sélection Rolf Beeler Gruyère
150g Grated Sélection Rolf Beeler Raclette
100g Grated Sélection Rolf Beeler Hoch Ybrig
100ml quality mayonnaise
1 large onion, diced
1 leek, chopped
1 cup parsley, chopped
salt and pepper to taste
savoury tomato chutney or red capsicum relish
4 thickly cut slices of rye or multigrain bread
Preheat your oven or grill to 150 degrees celsius.
Mix the onion, leek, parsley and mayonnaise with the three cheeses.
Spread chutney or relish on the slices of bread and top with cheese mixture.
Place slices of bread on a tray under the grill for 5-10 minutes or until the top of the cheesy mixture starts to go a golden brown colour.
Serve warm with your choice of pickles or cornichons.
TIP: Unused cheese mixture will last up to one week in an airtight container in the fridge.
