Gluten-Free Nut Biscuits with Dark Chocolate
Makes 14 biscuits
Ingredients:
100g walnuts, plus 7 extra, halved
100g peanut butter
40g butter
120g light brown sugar or cane sugar
100g almond meal
100g gluten-free dark chocolate
Method:
Preheat oven to 185°C (165°C fan forced). Finely chop the walnuts in a blender. Using an electric mixer, beat the peanut butter, butter and sugar. Add the walnuts, almond meal and a pinch of salt and mix briefly to make an even dough. Wrap in cling film and refrigerate for 30 minutes.
Roll balls of the dough and place them on a baking tray lined with baking paper. Press biscuits flat to 1cm thickness. Place in oven for 12-15 minutes or until light golden brown. Remove from the oven and leave to cool completely on a wire rack.
Melt the chocolate in a double boiler. Cover the top of the biscuits with a layer of chocolate and garnish with half a walnut. Let cool and serve.
Store in a sealed container in a cool place or in the fridge.
