This simple gingerbread men recipe is easy to make and they taste delicious. These cookies can be used as table decorations and gifts. Get creative, you can make any cookie shape you want and pipe the icing to decorate as desired.
Gingerbread Men Recipe
Makes 32
Ingredients:
125g unsalted butter, softened
â…“ cup firmly packed (75g) brown sugar
â…” cup (230g) golden syrup
2½ cups (375g) plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp mixed spice
½ tsp ground cinnamon icing
Icing
2 egg whites, at room temperature
3 cups (480g) pure icing sugar, sifted
½ tsp lemon juice
Method:
Place the butter and sugar in the bowl of an electric mixer with a beater attached. Beat for 10-12 minutes or until pale and creamy.
Scrape down the sides of the bowl, add the golden syrup, flour, bicarbonate of soda, ginger, mixed spice and cinnamon. Beat until a smooth dough forms.
Roll the dough out between 2 sheets of non-stick baking paper to 4mm thick and refrigerate for 30 minutes.
Using a small 5cm gingerbread man cookie cutter, cut out 32 gingerbread men, re-rolling and refrigerating the dough as necessary. Place on 3 large baking trays lined with non-stick baking paper. Bake for 8-10 minutes or until golden. Transfer to a wire rack to cool completely.
To make the icing, whisk egg whites in a clean bowl of an electric mixer with a whisk attached, until frothy. Gradually whisk in sifted icing sugar, a tablespoon at a time, until stiff peaks form. Add lemon juice and mix to combine.
Spoon into a piping bag with a 2mm round nozzle. Pipe to decorate as desired.
