1 cup caster sugar
1 tbsp lemon juice
120g fresh raspberries
250g fresh strawberries, hulled, chopped
300g watermelon, rind removed, chopped
3 small kiwifruit, peeled, chopped
Combine 2 cups of water and sugar in a large saucepan over a medium heat. Stir until sugar is dissolved and mixture comes to the boil. Simmer for 10 minutes. Stir in lemon juice. Set syrup aside to cool. Place raspberries and 1 cup of the sugar syrup in a food processor. Process until a smooth puree forms. Pour into 3 icy pole moulds. Insert popsicle stick. Repeat process 3 times using: strawberries and ½ cup sugar syrup; watermelon and ½ cup sugar syrup; and kiwifruit and 1 cup sugar syrup. Place icy pole moulds in the freezer until frozen.
Note: If making these for adults you could stir 1 tbsp vodka or gin into each mixture before pouring into the icy pole moulds
