Summer Fruit Salad with Frangelico & Lime Syrup

Serves 8

Ingredients

1 cup caster sugar

50ml Frangelico (hazelnut) liqueur

⅓ cup lime juice

1 small pineapple, skin removed, cut into pieces

2 large mangoes, skins removed, diced

2 cups white grapes

250g punnet strawberries, sliced

3 kiwifruit, peeled, sliced

2 x 125g punnet raspberries

cream (or thick yoghurt), to serve

 

Method

  1. To make syrup, combine sugar, liqueur, lime juice and 1/3 cup water in a saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Reduce heat to low and simmer for 5 minutes. Remove syrup from heat and cool. Transfer to 
a bowl, cover and refrigerate until cold.
  2. Put pineapple, mango, peach, grapes, strawberries, kiwifruit and raspberries in a large bowl. Toss until well combined. Cover and refrigerate until required.
  3. Add syrup to fruit just before serving. Serve with cream.
