Serves: 4-6
For the salad:
2 cups Ceres Organics Freekeh
½ red onion, finely sliced
1 cup artichoke hearts in oil, quartered
1 bunch asparagus spears, blanched
For the dressing:
½ cup pomegranate seeds
1 Tbsp pomegranate molasses
1 Tbsp Braggs Apple Cider Vinegar
3 Tbsp Ceres Organics Extra Virgin Olive Oil
Ceres Organics Sea salt, to taste
Cook freekeh according to packet instructions. Cool.
In a salad bowl, combine freekeh with the remaining salad ingredients.
Mix all the dressing ingredients and drizzle over the salad. Toss to combine.
