These tasty Tamarillo & Apple Muffins are the perfect autumn bake, balancing two of our favourite flavours.
Tamarillo & Apple Muffins
2 cups self-raising flour
1 tsp ground cinnamon
1 tsp baking powder
1/3 cup light brown sugar
2 large eggs
2 50g melted unsalted butter
1/2 large cooking (Granny Smith) apple, peeled cored and grated
1 large tamarillo, peeled and chopped
1 tsp vanilla essence
1/3 cup seedless raisins
1/4 cup milk
1 Pre heat oven to 90 degrees C.
2 Mix sifted flour, cinnamon and baking powder.
3 In a separate bowl beat eggs and sugar stir in melted butter, grated apple, tamarillo and vanilla. Stir and add raisins and milk. Stir.
4 Fold in flour mixture – do not overmix. Spoon into paper cases or thoroughly greased muffin tins. Bake 15-20 mins .
