Pork Chipolatas with Red Grapes
In season ingredient: Red grapes
1 large red onion, cut into thin wedges
1kg good-quality pork chipolatas
500g red seedless grapes, separated into small clusters
¾ cup balsamic glaze
½ cup apple juice
salt and pepper, to season
10 fresh thyme sprigs
crusty Italian bread, to serve
1 Preheat oven to 200C. Put onion in the base of a large ovenproof dish. Top with chipolatas and grapes.
2 Combine balsamic glaze and apple juice in a jug. Pour over chipolatas and grapes. Season with salt and pepper and sprinkle with thyme. Bake for 45 minutes or until browned and chipolatas are cooked through.
3 Serve with crusty Italian bread.
