Makes 8
½ quantity of pizza dough
1½ cups store-bought
caramelised onions
180g gorgonzola dolce, sliced
8 figs, halved
1 cup watercress
1 Preheat oven to 220°C. Divide dough into 8 pieces and roll out each piece into an 18cm round. Place on 2 lightly oiled baking trays.
2 Divide caramelised onions between bases and top with gorgonzola. Season with sea salt and freshly ground black pepper.
3 Bake in the oven for 8-10 minutes or until base is golden and crisp. Top with figs and watercress to serve.
