Figs On Toast

Figs On Toast. Figs are one of the most beautiful, sexy, weird and polarising foods there is. They are also a sign from nature that summer is well and truly on your skin and in your skin and in your mouth and hair and all over the place – and if you haven’t had a sandy bed at least once yet, you need to hurry up and get your arse to the beach. I love figs. Here is a luxurious way with them that makes the most of both the fruit’s assets and your need to not fuck around too much because you have some urgent ocean swimming to do.

Serves 4

Cooking time: none  | Prep time: 2 mins plus toasting

 

250 G (9 OZ) Cottage cheese or a creamy blue cheese (e.g. gorgonzola) 

6 Big fat figs  

4 Slices best-quality seedy bread

Honey to serve (optional)

 

Have four big plates on standby. Take your cheese out of the fridge and allow it to warm to room temperature (if you have time).

Trim the woody ends off the figs then halve them lengthways.

Pop the bread in the toaster.

As soon as it jumps out of the toaster, spread the cheese quickly over the toast.

Top each slice with three fig halves, drizzle over a little honey, if you like, and serve with hot tea.

 

TIPS

1. Swap the cheese for peanut butter for something bonkers.

2. This is a lot of fig for a small amount of bread, which is exactly how it should be.
