Fig and Burrata Salad with Lemon Dressing

For a delicious summer salad try this Fig and Burrata Salad with Lemon Dressing. For a more robust salad, add some torn prosciutto and crusty croutons. This salad is the perfect accompaniment to the sticky sherry and fig glazed ham.

Fig and Burrata Salad with Lemon Dressing Recipe

Serves 6

Ingredients:

1 tsp finely grated lemon rind

2 tbsp lemon juice

¼ cup extra virgin olive oil

½ tsp Dijon mustard

12 small figs, halved

220g burrata

1 tbsp slivered pistachios (or roughly chopped pistachio)

½ cup baby parsley leaves

Method:

For the dressing, combine lemon rind, lemon juice, oil and mustard in a small bowl. Season with salt and pepper and whisk to combine.

Place figs in a bowl. Add half the dressing and gently toss to combine. Set aside for flavours to develop.

Place on a platter, top with torn burrata and pistachios. Serve with parsley and remaining dressing.

Smart Tip:
