Endive and Bacon Skewers with Rosemary Oil Recipe

Makes 4 serves

Ingredients

  • 8 small (or 4 large) endives
  • ½ lemon, juice only
  • 8 slices of smoked bacon
  • 4 rosemary sprigs, finely chopped
  • 1 tbsp honey
  • 4 tbsp olive oil

Method

  1. Remove the bitter core from the endives and cut small ones lengthwise into two, or cut large ones into quarters. Drizzle with lemon juice, season, and wrap in slices of bacon. Thread onto pre-soaked wooden skewers.
  2. To make the rosemary oil, mix the rosemary with the honey and olive oil and season. Rub the skewers with the rosemary oil. Grill or fry the skewers over low heat until tender. Serve the endive & bacon skewers with the remaining rosemary oil.

Smart tip

Endive is the perfect candidate to grow in pots. Keep the pot away from direct sunlight but ensure you water it daily, especially during the hot days. Harvest fresh leaves for sandwiches and salads.
