These delicious Double-Chocolate Peanut-Butter Biscuits are made even more decadent with a gooey peanut-butter center. A sprinkling of sea salt balances out the sweet, with added salty flavour.
Double-Chocolate Peanut-Butter Biscuit Recipe
Makes 18
Ingredients:
sea salt, for sprinkling
Peanut-Butter Filling
1/3 cup peanut butter
1/3 cup icing sugar
20g butter, softened
1 tsp vanilla extract
Biscuits
50g butter, softened
2/3 cup brown sugar
1 tsp vanilla extract
2 eggs
200g dark chocolate, melted, plus 150g, chopped
1¾ cups plain flour, sifted
1½ tsp baking powder, sifted
2 tbsp cocoa, sifted
Method:
For filling, place all filling ingredients in the bowl of an electric mixer and beat for 3-4 minutes or until light and fluffy. Refrigerate until firm.
To make biscuits, preheat oven to 180°C. Place butter, brown sugar, and vanilla in the bowl of an electric mixer and beat for 8 minutes or until mixture is light and creamy.
Add eggs one at a time, beating well after each addition. Pour in melted chocolate and mix to combine. Add flour, baking powder, and cocoa and mix to combine. Stir through chopped chocolate. (This mixture may be a little sticky, so you may want to refrigerate it for 15 minutes before handling.)
Take 2 tablespoons of dough and roll into a ball, then flatten out with the palm of your hand, place 1 teaspoon of filling in the centre, and fold biscuit dough to enclose.
Place on a baking tray lined with baking paper. Repeat with remaining dough and peanut-butter mixture. Sprinkle with a little sea salt and bake for 10-12 minutes or until firm to the touch. Let cool slightly on tray, then transfer to a wire rack to cool completely.
