These Cuban Style Beef Sandwich are the perfect addition to any summer picnic. They’re easy to make and will transport well so you can enjoy your outing and make magical memories with your loved ones.
1 pack Silver Fern Farms New York Strip Steaks
Extra virgin olive oil, to drizzle, plus extra 2 tbsp
2 garlic cloves
2 tbsp onion powder
1 tbsp ground cumin
1 tsp ground coriander
1 tsp ground chipotle (chipotle powder)
1 1/2 cups mayonnaise
1 large crunchy bread loaf, cut into 8 slices
12 slices cheese
2-3 red capsicums, charred, peeled, deseeded
4 dill pickles, sliced, plus extra to serve
2 cups micro watercress
French or yellow mustard
Remove Silver Fern Farms Beef New York Strip Steaks from the fridge and packaging. Drizzle with a little oil and season with sea salt flakes and freshly ground black pepper. Set aside at room temperature for 5 minutes to rest.
Grind garlic, onion powder, cumin, coriander and chipotle in a spice grinder or with a mortar and pestle. Rub 1/2 of the spice mix over beef. Set aside. Mix remaining into mayonnaise. Place spicy mayonnaise in a container.
Lightly oil bread on one side and set aside. Heat extra 2 tablespoons oil in a heavy-based frying pan or barbecue flat plate over a medium-to-high heat. Cook beef for 3-4 minutes each side or to your liking. Remove from heat, cover with foil and set aside for 5 minutes to rest. Grill bread, oiled side down, on barbecue for a few minutes.
To assemble sandwiches once at your picnic, arrange 4 slices of bread, grilled side down. Spread each slice with spicy mayonnaise and top with cheese, capsicum, pickles and watercress. Slice beef across the grain into thin pieces and divide between sandwiches. Top with mustard. Top each with remaining bread, grilled side up.
Slice sandwiches in half. Serve with more spicy mayonnaise and extra pickles on the side.
