Crushed Potato with Snapper

RECIPE: Crushed Potato with Snapper

4 portion size pieces of snapper

8 new potatoes

1 bay leaf

3 sprigs thyme

Pinch of salt

1 teaspoon chive batons

2 tomatoes peeled, deseeded and dice

8 kalamata olives chopped

Splash of olive oil

½ lemon juiced

Put the potatoes in a pan and cover with water. Add thyme, bay leaf and salt, cook until just done then strain and leave to air dry for 10 minutes.

Peel the potatoes and crush gently with a fork to warm through again and add olive oil, lemon juice, tomato, olives and chives.

Make a quick dressing by warming 100ml olive oil, zest and juice of ½ a lemon, salt and pepper. Take of heat and add some chopped chives, parsley and basil.

Pan seared fish and place on top of potatoes, and then drizzle the dressing over.

Serve with green beans and salad.
