Crostini with Crispy Salmon and Ricotta

Impress your friends with the easy Crostini with Crispy Salmon and Ricotta, all it takes is 4 ingredients and a little time to crisp up the smoked salmon. For the perfect accompanying beverage, try the Summer Aqua Fresca

Crostini with Crispy Salmon and Ricotta

Serves 6

Ingredients:

125g packet cold smoked salmon, finely chopped

1⁄2 cup fresh ricotta

12 medium lavosh-style crackers

Chervil leaves, to serve

Method:

Heat a small non-stick frying pan over high heat. Add the salmon and cook, stirring occasionally for 6 minutes, or until golden and crisp. Set aside to cool. To serve, spread the lavosh with ricotta, spoon over the salmon and sprinkle with chervil and pepper.
