1 sheet reduced-fat shortcrust pastry, just thawed
1 egg, lightly beaten
3 craisins, halved
2 tsp sunflower seeds
2 tsp sesame seeds
2 tsp black chia seeds
2 tsp pumpkin seeds
¼ cup finely grated parmesan
Preheat oven to 200°C.
Line a baking tray with baking paper.
Using a 13cm gingerbread man cutter, cut 6 figures out of the pastry. Place on prepared tray.
Brush with egg wash. Place 2 currants on the figures for eyes, half a craisin for a mouth and a sunflower seed as a nose. Decorate body as desired using sesame seeds, chia seeds, pumpkin seeds, remaining sunflower seeds and parmesan.
Bake for 15-20 minutes or until golden and crisp. Cool completely before storing in an airtight container.
