1 cup cranberry juice
2 tbsp Grand Marnier or Cointreau
2 tbsp lemon juice
6 sugar cubes
1 x 750ml bottle sparkling rosé, chilled
½ pomegranate, seeded
Place cranberry juice in a saucepan over high heat. Bring to the boil. Boil, uncovered, for 5 minutes or until liquid is reduced by half and thickens slightly. Remove from heat; set aside to cool completely.
Combine cranberry syrup, Grand Marnier and lemon juice in a jug. Place a sugar cube in the base of six serving glass. Add cranberry mixture. Top with sparkling rosé and serve with pomegranate seeds.
