Classic French Beef Tartare Recipe

Makes 4 serves

Ingredients

  • 4 tbsp red wine vinegar
  • 1 shallot, finely chopped
  • 2 tbsp store-bought mayonnaise
  • ⅛ tsp Tabasco (optional)
  • 500g beef fillet, trimmed
  • 4 egg yolks
  • 2 tbsp capers, rinsed
  • 4 mini gherkins, finely chopped
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • Sourdough bread or French fries, to serve

Method

  1. In a non-reactive bowl, mix the red wine vinegar with 2 tablespoons of water, add the shallots, and pickle for at least 1 hour. Mix mayonnaise with Tabasco (optional) and set aside.
  2. Meanwhile, cut the steak into very fine pieces. Divide tartare among four serving rings or ramekins. Create a small well in the top of each serve. Fill with an egg yolk.
  3. Drain the pickled shallots and place in four small bowls. Plate tartare with the pickled shallots, capers and gherkins, mayonnaise, and mustard. Drizzle tartare with Worcestershire sauce and season. Mix according to personal taste. Serve with bread or French fries.
Smart tip

Before cutting the steak, place the fillet on a plate in the freezer for at least 20 minutes. This will allow the steak to firm up, making cutting it much easier.
