Cinnamon Rolls

Cinnamon Rolls Recipe

Try making these easy cinnamon rolls, they are delicious served warm or cold with or without butter. The soft dough is filled with cinnamon butter and carefully rolled up and baked to perfection.

 

Makes 12 cinnamon rolls

Ingredients

  • 180ml milk
  • 70g sugar
  • 80g butter
  • 1 2/3 tsp salt
  • 11g instant yeast
  • 30ml lukewarm water
  • 500g plain or pastry flour, plus extra for dusting
  • 1 large egg
  • 120g butter, room temperature
  • 150g caster sugar or brown sugar
  • 1 tsp cinnamon
  • 1 egg yolk, whisked (to brush the tops of the cinnamon rolls)

Method

  1. For the dough, add 180ml milk, 70g sugar, 80g butter and 1 2/3 salt to a small to medium saucepan over a medium heat, stir until the butter is melted. Remove from heat and let cool.
  2. In a small bowl, mix the yeast with water. Let this stand for at least 10 minutes until it begins to foam slightly.
  3. In a large bowl mix the flour with the milk mixture, yeast mixture and 1 large egg. Knead the dough for 8-10 minutes by hand on a lightly floured surface or in a food processor (fitted with a dough hook). Place the dough in a bowl, cover with a clean damp tea towel and let rise for 1 hour to 1 hour and 30 minutes in a warm place or in the oven at 40°C until doubled in size.
  4. Meanwhile to make the filling, place 120g softened butter with 150g caster sugar and cinnamon in a bowl. Keep at room temperature so you can easily spread this on the dough later.
  5. Roll out the dough on a floured surface into a rectangle about 1cm thick. Spread dough with the cinnamon butter. Carefully roll up the dough lengthways and cut with a sharp knife into slices about 4cm thick.
  6. Butter a large baking tray. Place the cinnamon rolls in the baking tray. Do not place them too close together, as they are still rising. Cover with a clean damp tea towel and let rise for about 12 hours in the refrigerator or 60 minutes in a warm place. 
  7. Preheat the oven to 185°C (165°C fan forced). After rising, gently brush the tops with the egg yolk and place in the preheated oven for 25 minutes or until lightly golden brown. You can eat them warm, lukewarm or cold.

Smart tip

To eat warm, fresh cinnamon rolls in the morning, it is best to start 12 hours in advance.
