Chicken in a Spicy Creamy Tomato Sauce Recipe

Ingredients:
1 onion, chopped
1 clove garlic, crushed
1 tsp chilli flakes
2 tbsp olive oil
1 red capsicum, diced
700ml passata
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp mascarpone
600g chicken breasts
125g mozzarella, sliced
40g grated pecorino cheese
Handful of fresh basil leaves
Fresh baguette
Method:
Preheat the oven to 200°C (180°C fan-forced). In a large casserole pan over medium heat, fry onion, garlic and chilli flakes in half the olive oil until translucent. Add the capsicum and fry for 5 minutes.
Preheat the oven to 200°C (180°C fan-forced). Pour the passata into the casserole pan. Add thyme and rosemary. Season. Let the sauce simmer for 15 minutes. During the last 2 minutes, stir in mascarpone.
Meanwhile, make shallow incisions about 1.25-2cm deep in the chicken breasts and season. In a large frying pan over high heat, fry the chicken in the remaining olive oil until golden brown.
Place chicken in a medium-sized, shallow baking dish and cover with the tomato sauce. Top with mozzarella and pecorino cheese. Place in oven and cook until the mozzarella bubbles and colours and the chicken is cooked through. Sprinkle with basil and serve with a fresh baguette.
