Chicken and Cucumber Noodle Salad with Cucumber Dressing Recipe

Makes 4 serves

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 large chicken breasts
  • 400g halloumi, sliced
  • 4 Lebanese cucumber, spiralised
  • ½ cup mint leaves
  • ¼ cup caper berries
  • 250g cherry tomatoes, halved
  • 1 small Lebanese cucumber, chopped
  • ¼ cup extra virgin olive oil
  • ¼ cup lemon juice
  • ½ cup basil leaves
  • 1 tbsp caper berries, stems removed

Method

  1. For the dressing, place the chopped cucumber, ¼ cup oil, lemon juice, basil leaves and 1 tbsp caper berries in a blender and blend until smooth. Season and set aside.
  2. Heat 1 tbsp oil in a large non-stick frying pan over medium heat.
  3. Season the chicken. Add to the pan and cook for 4-6 minutes each side, or until golden and cooked through. Remove and set aside.
  4. Wipe out the pan, add remaining 1 tbsp oil, add the halloumi in two batches and cook for 4 minutes, turning until golden.
  5. Combine the cucumber noodles, mint, ¼ cup caper berries and tomatoes in a bowl. Add half the dressing and toss to combine.
  6. Slice the chicken. Serve chicken and halloumi with cucumber salad. Drizzle with extra dressing to serve.

Smart Tip

Don’t have a spiraliser? Use a peeler or julienne peeler and peel your cucumber into ribbons. This dressing can be made in advance and kept refrigerated for up to 3 days. It’s great served with seafood.
