Champignon Toast Recipe

Perfect for cooler days when you crave something that is both nourishing and deeply satisfying. This dish highlights the rich, earthy flavours of mushrooms served on perfectly toasted, crusty bread. Whether you are hosting friends for a weekend feast or looking for a simple, luxurious midweek meal.

 

Makes 2 serves

Ingredients

  • 100g butter
  • 250g small portobello or button mushrooms, cut into wedges
  • 2 garlic cloves, whole and peeled
  • 1 shallot, finely chopped
  • 2 thick slices of milk bread
  • 1 tbsp finely chopped parsley
  • Lemon wedges, to serve

Method

  1. Preheat oven to 120°C (fan forced 100°C). Heat 1 tablespoon butter in a non-stick frying pan over high heat. Add mushrooms and garlic and fry, stirring for 5 minutes or until the garlic is tender. Season. Reduce the heat to low and add the shallots and 1 tablespoon butter and cook for 5 minutes.
  2. Meanwhile, spread the bread slices with butter on both sides. Heat a non-stick frying pan over medium-high heat. Add bread and fry until light golden-brown on both sides. Keep warm.
  3. Remove garlic cloves from the pan. Top the crispy toast with the sautéed mushrooms and parsley. Serve with lemon wedges.

Smart tip

Wipe the mushrooms clean with a kitchen towel or peel them. Do not soak the mushrooms before cooking as the water will make them soggy.
