Ceres Organics Zuppa di Farro. This ‘Zuppa’ (or soup) combines beautiful Italian flavours with farro, the oldest cultivated grain in the world.
Ready in: 30 minutes
Serves: 4-6
2 Tbsp Ceres Organics Extra Virgin Olive Oil
1 clove garlic, minced
1 ½ cups Ceres Organics Farro
1 packet Ceres Organics Chopped Tomatoes Combisafe Pack
small handful fresh parsley, chopped
small handful fresh basil, chopped
2 packets Imagine Vegetable or Chicken Broth
1 can Ceres Organics Cannellini Beans, rinsed and drained
½ cup parmesan cheese, grated
Ceres Organics Sea Salt, to taste
Sprig of fresh thyme and basil, to garnish
Heat oil in a saucepan. Add garlic and farro, and lightly sauté until grains are toasted.
Stir in tomatoes, parsley and basil. Cook for a minute. Add stock and bring to the boil. Simmer covered for 20 minutes, stirring occasionally. If the consistency becomes too thick add some water.
Take off the heat, and mix in the cannellini beans. Stir in parmesan cheese and season to taste.
Serve with a drizzle of olive oil and garnish with fresh thyme and basil.
