Ready in 20 minutes
FOR THE SALAD
2 heads broccoli, cut into small florets
2 cups baby spinach, washed and spin-dried
¾ cup Ceres Organics Raisins
1 cup Ceres Organics Sunflower Seeds
1 cup Ceres Organics Pumpkin Seeds
½ cup pine nuts, dry toasted
FOR THE DRESSING
1 cup Ceres Organics Cashews
1 can (400g) Ceres Organics Cannellini Beans
¼ cup Natural Value Maple Syrup
¼ cup Bragg Apple Cider Vinegar
1 clove fresh garlic, crushed
½ tsp Natural Value Dijon Mustard
¼ cup Ceres Organics Extra Virgin Olive Oil
Ceres Organics Herb Salt
¼ cup filtered water
Blanch broccoli florets in boiling, salted water for 2 minutes. Plunge in icy cold water, then drain.
In a big salad bowl, combine blanched broccoli with the rest of the salad ingredients.
Place all dressing ingredients in a blender and process until smooth.
Pour dressing over salad and toss well.
