Cannelloni with Sweet and Sour Tomatoes Recipe

Cannelloni with Sweet and Sour Tomatoes is a creative way to use wraps as cannelloni pasta. The wraps are filled with a sweet and sour mixture made with tender turkey, capsicum and pineapple and baked in a tangy tomato sauce and sprinkled with cheese and dried thyme. Serve the Cannelloni with Sweet and Sour Tomatoes when the cheese is golden brown.

Makes 4 serves

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 400g diced tomatoes
  • 200g passata
  • ½ tsp dried thyme, ¼ extra for topping
  • 2-3 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 500g turkey breast, cut into strips
  • 1 tsp chicken seasoning
  • 1 red capsicum, cut into strips
  • ½ pineapple, cut into fine cube
  • 4 large or 8 small wraps
  • 100g grated cheese

Method

  1. Preheat oven at 185°C (165°C fan forced). In a large heavy-based pan over a low heat, add 1 tablespoon olive oil and fry the onion and garlic for 4 minutes. Add the tomatoes, passata, thyme, apple cider vinegar, brown sugar, Worcestershire sauce, soy sauce and season with pepper. Cover and simmer gently for 20 minutes.
  2. Meanwhile, season the turkey with chicken seasoning, salt and pepper. Heat a large frying pan over medium heat, add remaining olive oil and fry the turkey and capsicum until tender. Remove the pan from the heat and add the pineapple.
  3. Fill wraps with the turkey mixture. Roll up the wraps. Place a layer of tomato sauce in a baking dish and top with the filled wraps. Pour remaining sauce over the wraps and sprinkle with cheese and extra dried thyme. Bake for 25 minutes or until golden brown and cooked through.
