This crunchy Cabbage and Apple Salad with Yoghurt Dressing goes with almost anything, try it with roast pork or grilled chicken. The tangy Yoghurt Dressing is great with this salad but it works equally well folded into potato salad.
Cabbage and Apple Salad with Yoghurt Dressing
Serves: 6
Ingredients:
2 tbsp lemon juice
2 red apples, skin on, thinly sliced
2 green apples, skin on, thinly sliced
1 large fennel bulb, trimmed, reserve stems,
400g red cabbage, roughly chopped
400g savoy cabbage, roughly chopped
1 red onion, thinly sliced
1 tbsp dill seeds
Yoghurt Dressing
1 cup unsweetened plain yoghurt
½ cup mayonnaise
3 tbsp lemon juice
¼ tsp cayenne pepper
1 tsp Dijon mustard
¼ cup chives, snipped, plus extra to garnish
Method:
Pour lemon juice over apple and fennel to reduce browning. Combine all salad ingredients in a large bowl.
To make yoghurt dressing, mix ingredients until well combined.
Spoon dressing over salad and garnish with thinly sliced fennel stems and extra chives.
