Buckwheat & Bean Salad with Sundried Tomato Dressing. A tasty, gluten-free buckwheat and bean salad with a tangy sundried tomato dressing.
Ready in 30 minutes
1 cup Ceres Organics Buckwheat
300g green beans, trimmed and cut in thirds
1 can Ceres Organics Chickpeas, rinsed and drained
1 can Ceres Organics Cannellini Beans, rinsed and drained
1 cup cherry tomatoes, halved
½ cup Rapunzel Organic Kalamata Olives
1/3 cup torn fresh basil leaves
Sundried Tomato Dressing:
½ cup Ceres Organics Sundried Tomatoes
1 tsp Planet Organic Oregano
2 Tbsp Ceres Organics White Wine Vinegar
4 Tbsp Ceres Organics Olive Oil
Ceres Organics Herb Salt
Freshly ground black pepper
Cook buckwheat in 2 cups boiling water for 8 minutes or until tender then drain well and set aside to cool.
Cook the green beans in boiling, salted water for 2 to 3 minutes until just tender. Drain and plunge into ice cold water to refresh and cool. Drain well.
Combine the buckwheat, beans, chickpeas, cannellini beans, cherry tomatoes and olives in a large salad bowl. Set aside.
To make the dressing:
Place sundried tomatoes in a bowl with ½ cup boiling water and leave for 20 minutes to soften. Transfer sundried tomatoes and soaking liquid plus remaining dressing ingredients into the food processor and puree. Season with herb salt and pepper.
Pour dressing over salad and toss well. Scatter fresh basil and serve.
