Brown Sugar and Pecan Biscuits
These melt-in-your-mouth biscuits can be whipped up in no time and taste dangerously good.

Makes 36

200g butter, melted

350g light brown sugar
1 teaspoon salt
1 egg
2 teaspoons vanilla extract
285g plain flour
1 teaspoon baking powder
½ teaspoon baking soda
1 cup chopped pecans or walnuts

Preheat oven to 180°C. Line two baking trays with baking paper.

Mix together the butter, brown sugar and salt in a large bowl until combined. Stir in the egg and vanilla until well combined. Add flour, baking powder, baking soda and chopped nuts to bowl and stir until combined.

Roll out walnut-sized sized balls of dough and place onto baking trays, allowing space for spreading. Press down and sprinkle the tops with a little extra brown sugar.

Bake in oven for 9 to 11 minutes, until the biscuits have puffed and the tops are slightly cracked. Leave to cool on the baking tray and then transfer to wire rack to cool.
