Broccoli Soufflé with Aged Cheese & Tarragon
Serve this light and fluffy Broccoli Soufflé with Aged Cheese and Tarragon immediately after baking.

Broccoli Soufflé with Aged Cheese and Tarragon is decadent French classic. Each bite is creamy, with a subtle licorice flavour of fresh tarragon, the earthiness of broccoli and the smokiness of the trout. The Broccoli Soufflé is delicious with fresh sourdough bread.

Broccoli Soufflé with Aged Cheese and Tarragon Recipe

Makes 4 serves

Ingredients

  • 25g butter, plus extra for greasing ramekins
  • 1 small broccoli, cut into florets
  • 3 tbsp flour
  • 150ml milk
  • 1 tsp chopped fresh tarragon
  • 50g aged cheese of your choice, grated
  • 100g smoked trout, coarsely chopped
  • 2 eggs, separated
  • Sourdough bread, to serve
  • Broccoli leaves to serve, optional

Method

  1. Preheat the oven to 200°C (180°C fan forced). Grease four individual soufflé ramekins with plenty of melted butter. Steam broccoli florets until al dente. Drain and purée.
  2. In a saucepan, melt the butter with the flour, cook for 1 minute. Gradually add the milk and whisk to make a thick sauce. Add the broccoli purée, tarragon, cheese, smoked trout and egg yolks to the mixture and stir well. Whisk the egg whites, then gently fold into the batter. Season.
  3. Divide the batter into four ramekins. Bake for 20-25 minutes. This soufflé is delicious with sourdough bread.
