Broccoli & Bacon Soup. High in vitamin C, broccoli is the perfect base for a healthy winter soup. This recipe takes just minutes to make and, topped off with a dollop of sour cream and a handful of crispy bacon, you’ll be wanting more.
Broccoli & Bacon Soup
Serves 4
20g butter
1 tbsp olive oil
1 brown onion, finely chopped
4 rashers bacon, rind removed, diced
3 heads of broccoli, florets removed
4 cups vegetable or chicken stock
1 cup water
2 rashers bacon, extra, rind removed, diced
2 tbsp sour cream
fr eshly ground black pepper
Method
- Heat butter and oil in a large deep saucepan over medium heat. When butter has melted, add onion and bacon and cook for 5 minutes or until onion is soft and bacon golden.
- Add broccoli to pan and stir until combined and coated with pan juices. Pour stock and water into pan and bring to the boil. Simmer for 15 minutes or until broccoli is soft.
- Using a puree wand or food processor, puree soup mixture. After the soup has been pureed, return to saucepan and place over a low heat to keep warm. Season with salt and pepper.
- Meanwhile, heat a small non-stick frying pan over medium heat, add extra bacon and cook until crisp. Ladle soup into bowls. Top with sour cream, crispy bacon and black pepper.
