Blue Breakfast Bowl

A powerhouse of nutrition, spirulina will provide you energy and a hit of antioxidants to power through your day. Pile it into this delicious and dreamy smoothie bowl for the ultimate breakfast-in-bed.

Blue Breakfast Bowl

Serves 1, 10 mins, VGN, DF, GF, RSF

Smoothie Bowls are my thing. I love them super cold and creamy, loaded with fresh fruit and crunchy toppings.

I’ve added blue spirulina to this beauty for the vibrant blue colour.

A powerhouse of nutrition, spirulina will provide you energy and a hit of antioxidants to power through your day. It is available online and at good health food stores.

2 frozen bananas, chopped
½ – 1 cup (70-140g) frozen pineapple, chopped
1 tbsp almond butter
½-1 tsp blue spirulina
1 tsp mesquite powder (optional)
1 cup (240ml) coconut milk
½ cup (120ml) rice milk

Topping

1 fig, sliced
1 peach, sliced
½ plum, sliced
½ kiwi, sliced
1 tbsp blueberries
1 tbsp shredded coconut
1 tbsp almond butter

Place frozen bananas, pineapple, almond butter, ½ tsp blue spirulina, mesquite powder, coconut and rice milk in your blender and whizz till smooth. Taste and check colour. If you like, add extra ½ tsp spirulina.

Pour into your bowl and top with fruit, coconut and almond butter.

Devour!
