Blackberry Ripple Ice cream Sandwiches Recipe
Makes: 1 Litre
Ingredients:
200g fresh or frozen blackberries
¼ cup caster sugar
1 litre ice cream base, churned until set but not frozen
Cookies, to serve
Method:
Combine blackberries and sugar in a small saucepan over medium heat. Cook, stirring, for 2 minutes or until sugar dissolves and blackberries break down. Remove from heat. Strain through a fine sieve, pushing as much pulp through as possible. Set aside to
cool completely.
Place ice cream base in a bowl. Add blackberry juice and gently fold to marble through ice cream. Transfer to a metal container. Cover and place in the freezer for 6 hours or until firm.
Sandwich scoops between cookies to serve.
