Blackberries are not only delicious, but high in antioxidants and fibre. Use them to make this delicious and simple baked blackberry cheesecake slice.
Blackberry Cheesecake Slice Recipe
Makes 24
Ingredients:
Biscuit Layers
200g butter, softened
1¼ cups caster sugar
2 eggs
2 tsp vanilla extract
2 cups plain flour
1 tsp baking powder
½ tsp baking soda
Filling
3 tsp powdered gelatine
¼ cup cold water
375g cream cheese
1 tsp vanilla extract
1 cup caster sugar
1 cup pouring cream
375g blackberries
Method:
Preheat oven to 180°C. To make biscuit layers, place butter and sugar in the bowl of an electric mixer; beat for 8-10 minutes. Add eggs and vanilla; beat until well combined. Sift flour, baking powder, baking soda, and a pinch of salt. Add dry mixture to butter mixture; beat until just combined. Divide mixture between two greased and lined 20 x 30cm slice tins; spread evenly. Bake for 12-14 minutes. Let cool completely in tins.
Meanwhile, sprinkle gelatine over cold water; set aside for 5 minutes to absorb. Place cream cheese, vanilla, and sugar in the bowl of an electric mixer; beat for 2-3 minutes. Add cream; beat until just combined. Place gelatine in a saucepan over low heat; stir until it melts. Fold into cream-cheese mixture and pour over one of the biscuit bases. Arrange blackberries over cheesecake mixture; top with remaining biscuit layer. Place a baking tray on top; weigh it down with some food tins. Refrigerate overnight. Trim sides and cut into bars to serve.
