BBQ Beef Roast with Avocado Cream
When the weathers just too good for an indoor roast, a Silver Fern Farms beef Roast on the barbie is the perfect solution.
BBQ Beef Roast with Avocado Cream
1 pack of Silver Fern Farms Beef Prime-cut Roast
2 tsp ground cumin
2 tsp finely crushed dried smoked chilli, or more to taste
1 tbsp olive oil
flesh of one large avocado, mashed
1 clove garlic, crushed
2 tbsp chopped coriander or
parsley leaves
1 spring onion, green parts
finely sliced
finely grated zest of 1 lime and
2 tbsp lime juice
rocket or spinach leaves, to serve
lime wedges, to serve
Remove roast from packet 10-15 minutes before cooking to bring to room temperature.
Mix cumin and smoked chilli together. Season and sprinkle half onto a chopping board. Rub half of the oil over the roast, then roll it in spices to coat it all over.
Oil barbecue with remaining oil and preheat to high. Cook beef for 20 minutes, turning frequently, until all sides are well browned. Transfer to a plate, cover with foil and a clean cloth and allow to rest while you make the sauce.
Stir remaining spice mix with avocado, garlic, coriander or parsley, spring onion and lime zest and juice. Season.
Angle-cut the meat and serve with the avocado sauce on the side, accompanied by greens and lime wedges.
TOP TIP: By oiling the beef instead of the barbecue, the grill will get really hot without it burning, for a good searing. And it’ll keep the steak from sticking too.
