This light and tropical summer breakfast can be prepared on the barbecue. Serve Barbecued Mango with Passionfruit Yoghurt scattered with coconut, limes and passionfruit pulp.
Barbecued Mango with Passionfruit Yoghurt Recipe
Serves 6
Ingredients:
2 cups Greek yoghurt
1 tbsp honey
½ cup passionfruit pulp
6 mangoes, cut into cheeks
3 limes, cut in half
1 coconut, flesh finely shaved
Method:
Preheat barbecue grill to high. Combine yoghurt, honey and half the passionfruit.
Grill mango for 1-2 minutes or until lightly charred. Place on a serving platter. Add limes to barbecue and cook for 1 minute or until caramelised. Transfer to serving platter.
Scatter coconut over mango and limes. Serve immediately with passionfruit yoghurt and remaining passionfruit pulp.
