Take advantage of the wonderful hams available this season with these yummy Barbecued Ham Sliders. Make your sliders even more special and make Apple Cider mayonnaise. Place spinach leaves, barbecued ham steaks and pineapple on toasted buns. Top with a dollop of mayonnaise. Sprinkle with coriander and chilli.
Barbecued Ham Sliders Recipe
Serves 6
Ingredients:
12 thick slices leg ham
½ fresh pineapple, peeled, cored, cut into slices
6 soft fresh bread rolls, split
100g baby spinach leaves
coriander sprigs, to serve
fresh chilli, thinly sliced, to serve
Apple Cider Mayonnaise
½ cup sparkling apple cider
1 egg yolk
2 tsp mustard powder
2 tsp cider vinegar
½ cup grape seed oil
Method:
To make the apple cider mayonnaise, place apple cider in a medium saucepan over a high heat. Bring to the boil.
Cook for 5 minutes or until cider reduces to 1 tablespoon. Remove from heat and set aside to cool.
Place reduced cider, egg yolk, mustard and vinegar in the bowl of a small food processor and process until pale and creamy.
With the motor running, gradually add oil in a thin, steady stream until incorporated. Taste and season with salt and freshly ground black pepper.
Preheat barbecue grill to high. Cook ham steaks on barbecue for 2 minutes each side or until lightly charred.
Transfer to a plate. Add pineapple to barbecue and cook for 1-2 minutes each side or until caramelised. Remove from heat.
Lightly heat the cut-side of bread rolls until lightly toasted and slightly golden.
Place spinach leaves, ham and pineapple on toasted buns. Top with a dollop of mayonnaise. Sprinkle with coriander and chilli.
Serve immediately.
