Banana, Honey and Chocolate Bread Recipe
Makes 1 large loaf or 2 small loaves
Ingredients:
250g butter
2 cups (400g) brown sugar
2 teaspoons pure vanilla extract
3 eggs
4 bananas, mashed
4 tablespoons warm milk
1 teaspoon baking soda
3 cups (430g) plain flour, sifted
2 teaspoon baking powder
1 teaspoon ground cinnamon
250g dark chocolate buttons
1/4 cup liquid honey
Method:
Preheat oven to 160°C (fan forced). Grease and line a large loaf tin or two small loaf tins with baking paper.
Cream butter and sugar together until light and fluffy in an electric beater. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Mash the bananas together with the warm milk and baking soda, until well combined.
Sift together the flour, baking powder and cinnamon. Add the sifted flour and mashed bananas, alternating a spoonful of each at a time, and then mixing. Lastly add the chocolate buttons and honey and mix to just combine. Pour into large loaf tin, or divide between two small loaf tins.
Bake in preheated oven for 50 minutes to 1 hour and 20 minutes depending on size of tins. Insert a skewer into the bread. If it comes out clean the loaf is ready. Cool loaves in tins, before turning out onto a wire rack to cool completely. Store wrapped in greaseproof paper in an airtight tin in a cool place.
