Bacon, Avocado and Kimchi Bao buns
Makes 6
Ingredients
1 pack D’Orsogna Brothers Traditional Double Smoked Middle or Shortcut Bacon
6 large bao buns
2 tbsp grapeseed or peanut oil
3 tbsp Japanese Kewpie mayo
2 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp lime juice
1 large avocado, sliced into 6 wedges length ways
1 carrot, julienne
1 cup store-bought kimchi
6 slices cucumber, 3mm thick
2 spring onion, thinly sliced into 5mm rounds
½ cup coriander
½ bunch enoki mushrooms (optional)
3 tbsp roasted peanuts, crushed (optional)
Black sesame seeds (optional)
Sriracha to serve
Method
Combine hoisin, soy and lime juice in a bowl and whisk together.
Heat the oil in a large frypan and cook off the bacon to your liking, then remove the pan from heat and set aside. Finish the bacon by brushing each piece liberally with the sauce on either side.
Place a large bamboo steamer on top of a pot of water over medium-high heat. Place a piece of baking paper into the base of the steamer, add the defrosted buns, replace the lid and steam for 2 mins or until soft enough to pull the two sides apart.
Layer each bao with mayonnaise, folded hoisin drenched bacon, a slice of avocado, cucumber, kimchi, carrot and finally garnish with coriander, enoki, spring onion, sesame seeds and peanuts as desired.
Serve with chilli sauce on the side and lots of napkins.
