Crostini are simple to make and extremely versatile to use. Meaning “toasts” in Italian, they are the perfect base for flavoursome toppings. We used sourdough but you could use a baguette and turn the Avocado Crostini with Goat’s Cheese and Prawns into nibbles at your next gathering.
Avocado Crostini with Goat’s Cheese and Prawns Recipe
Serves 4
Ingredients:
2 tbsp avocado oil, plus extra to serve
12 green prawns, peeled, finely chopped
1 preserved lemon quarter, pith removed, finely chopped
1 long red chilli, seeds removed, finely chopped
150g soft goat’s curd
4 slices sourdough, toasted
1 large avocado, quartered
Micro red-vein sorrel
Lemon cheeks, to serve
Method:
Heat the oil in a large, non-stick frying pan over high heat. Season the chopped prawns with salt and pepper and add to the pan. Cook for 5 minutes, stirring, until golden. Add the preserved lemon and chilli and cook for a further minute. Take off the heat and set aside.
Spread the goat’s curd over the toasted sourdough slices. Top with avocado, prawns and micro red-vein sorrel. Drizzle with the extra oil, top with cracked pepper and serve with lemon cheeks on the side.
