Makes 8 servings (5 prawns each)
1/2 cup Olive Oil
1 grated peel of large lemon
1/4 cup lemon juice
1/4 cup chopped cilantro or Italian Parsley
1 tbsp Angostura® Aromatic Bitters
2 cloves crushed garlic
1 tsp salt
1/2 tsp hot pepper sauce
1kg large prawns, deveined with tails left on
In a non-metallic bowl, combine ingredients except prawns and skewers; stir well. Peel and devein prawns, leaving tails on. Add to marinade and stir to coat. Cover and refrigerate for 1-1/2 hours.
Drain prawns and thread on skewers; Place skewers on medium-high grill, and grill for 2-3 minutes per side until cooked through.
