Al Brown’s Butter Cake
Not an experienced baker? Try your hand at this simple butter cake recipe.

“The simplicity of this cake, how easy it is to make and its beautiful texture and flavour are why I bake it so often.” says Al.

Serves 6

225g unsalted butter,

room temperature
225g caster sugar 

4 large eggs, lightly beaten

1 tsp vanilla extract 

225g self-raising flour

½ cup milk

icing sugar, to dust

 

Preheat oven to 150°C. Beat butter in a kitchen mixer until light and creamy. Slowly add sugar, a little at a time, while whisking, until all sugar is incorporated. Mix eggs and vanilla into the creamed butter.

Fold in flour by hand, then incorporate milk gently with a wooden spoon. Pour the batter into a greased and lined cake or loaf tin. Place in the centre of the oven.

Bake cake for 50 minutes or until a skewer is inserted and comes out clean.

Remove from the oven and cool on a wire rack before dusting with icing sugar.
