Tuna & Avocado Poke Recipe: Ingredients 

[Serves 4]

  • 200g green tea (soba) noodles (see tip)
  • ⅓ cup light soy sauce
  • 3 tsp rice wine vinegar
  • 3 tsp sesame oil
  • 1 tsp chilli flakes
  • 1 tsp grated ginger
  • 500g sashimi tuna steak, diced into 1.5cm pieces
  • 1 tsp black sesame seeds, toasted (see tip)
  • 150g snow peas, sliced thinly lengthways, plus extra to serve
  • 1 carrot, thinly julienned
  • 2 shallots, sliced
  • 1 avocado, sliced
  • Pickled ginger, to serve
  • Wasabi, to serve

Tuna & Avocado Poke Recipe: Method

Step one: Cook green tea noodles according to packet instructions. Drain and run under cold running water to separate.

Step two: In a bowl, combine the soy sauce, vinegar, sesame oil, chilli flakes and ginger. Place tuna in a shallow bowl. Add 2 to 3 tablespoons soy marinade to tuna. Add sesame seeds and set aside to marinate.

Step three: Combine cooked noodles, snowpeas, carrot, shallot and remaining marinade in a large bowl.

Step four: Place noodle salad on a plate. Top with tuna, avocado, pickled ginger and extra snow pea sprouts. Serve with wasabi.

Smart tip: Black sesame seeds are available from selected supermarkets or Asian food stores. Green tea noodles can be purchased at Asian food stores, or you can substitute with wholemeal spaghetti.
