Baked Ham with Pineapple and Mustard Glaze

Baked Ham with Pineapple and Mustard Glaze recipe, brought to you by MiNDFOOD. With just a few simple ingredients it’s easy to cook this delicious ham. Perfect for cooking on Christmas Eve you’ll have plenty of ham for brunches at home and light evening meals.

 

Serves 6

1½ cups firmly packed brown sugar

1 cup pineapple juice

1 tbsp Dijon mustard

1 x 7kg leg of ham

 

1 Preheat oven to 160°C. Place a rack in the oven on the bottom shelf. Line a large roasting pan with baking paper.

2 Place sugar, pineapple juice and mustard into a small saucepan and stir over a medium heat until sugar is dissolved and mixture comes to the boil. Simmer for 20 minutes or until mixture thickens slightly. Transfer to a bowl. Cool.

3 Meanwhile, cut around shank of ham decoratively approximately 10cm from end of shank. Remove rind from ham by running your thumb around the edge under the skin at the widest end and gently pulling it back over shank. Discard skin. Using a small sharp knife, cut a diamond pattern over ham.

4 Place ham into prepared roasting pan. Brush glaze generously over ham. Bake for 30 minutes. Rebrush ham with glaze and bake for a further 30 minutes or until ham is sticky and golden. Cover loosely with foil if colouring too much. Transfer ham to a large platter. Stand for 10 minutes before slicing.

5 Serve with mustard and cranberry sauce, if desired.
