Serves 8-10

 
1 1/4cups chopped dates
3/4 cup boiling water
250g butter, softened
2 cups self-raising flour
1 cup dark brown sugar
4 eggs
2 tsp vanilla extract
2 tsp Mixed Spice
2 Royal Gala apples
 
Salted Caramel Sauce
1/2 cup cream
200g Home Brand Jersey Caramels
2 tbs dark brown sugar
1/2-1 tsp sea salt flakes
 
1. Preheat oven to 180°C. Grease and line a 20 x 30cm baking tray with baking paper. Place dates and boiling water into a bowl. Set aside for 5 minutes.
 
2. Place butter, flour, sugar, eggs, vanilla, and mixed spice into a food processor. Process until ingredients are smooth and well combined. Add date mixture and pulse to mix through. Transfer mixture to prepared tray.
 
3. Quarter the apples and remove cores. Slice thinly and arrange, overlapping rows on top of the cake mixture. Bake for 45minutes or until cooked when tested with a skewer. Cool in tray.
 
4. Place cream, caramels, sugar and salt flakes into a saucepan. Stir over low heat until melted and smooth. Cut cake into squares and serve drizzled with caramel sauce.
