Smoky Baked Beans Recipe
Serves 6
Ingredients:
1 tbsp olive oil
1 onion, finely sliced
4 garlic cloves, crushed
2 tbsp thyme leaves
2 x 400g cans chopped tomatoes
1 tbsp brown sugar
2 tsp smoked paprika
2 tbsp worcestershire sauce
500g bacon bones
3 cups chicken stock
2 cans butter beans, drained
buttered sourdough toast, to serve
parmesan, grated, to serve
Method:
Heat oil in a large casserole. Add onion, garlic, and thyme. Cook for 5-7 minutes, or until onions are tender. Add tomatoes, brown sugar, paprika, worcestershire, bacon bones, and stock and bring to the boil. Reduce to a slow simmer, cover, and cook for 80 minutes, or until sauce thickens and bacon is tender.
Add beans and season with salt and pepper. Cook for another 10 minutes. Sprinkle with parmesan and serve with hot buttered sourdough toast.

You can make this nourishing dish even heartier by serving the beans over a baked potato instead of toast.
